Bringing some moinks to a party tomorrow to open the "summer season" such as it is around here. Weather has been unseasonably cool here in N-Cal . Assembled some moinks for the party. I know they are supposed to be uncomplicated, but I made the meatballs from scratch before smoking. I started by grinding up a london broil and mixed in Italian bread crumbs, some green chilis, pepper, and Rudy's rub. Rolled them up.... Then thought it was a good idea to brown them in olive oil in a hot skillet (the Italian in me, I guess).... Wrapped everything in bacon... and into a 225* smoker with ash wood.
