Decided to do a couple of chuckies for dinner (and some left overs ) Seasoned one with Bad Byrons Butt Rub.... Don't really like it on pork, but it is real good on chicken and beef! LOL 2nd one I rubbed with a dry Jerk rub.... not sure of the name... I think it is "Pain is Good"... lol. I buy a habanero hot sauce from the same company that is awesome! Budda Dog says "He who waits near smoker gets treats!" 5 hrs. into the smoke.... was in the middle of a wicked stall. Stall was about 3 hrs. in, and I needed to get these done for dinner, so I pulled them off the smoker at 156° and applied the "Texas crutch"... lol. Double wrapped in foil with about 1/4 Cup of Killian's Red beer, then tossed them into a 300° oven. Took the internal temp to 195°, tossed them into a cooler for 1 hr. to rest. Here is the one with Bad Byrons Butt Rub...... ..... and here is the one with the Jerk rub, it had a really nice dark bark, very tastey! And here is the money shot! ..... and to top it all off the wife brought this while I was getting the images ready to post. Fresh made shortbread biscut, fresh made whip cream, and strawberries soaked in rum and sugar..... *drooool* All-in-all a good end to a good day!
