Mediterranean Chicken.
4 Chicken Breast, cut in to large dice.
4 Peppers, Capsium
3 Onions
4 Courgette, Eggplant.
Mushrooms.
Chicken Marinade.
Rosemary, fine chopped
4 Cloves of Garlic, fine chopped
1/2 cup of Lemon Juice
S&P
All mixed together and pounder over chicken to marinate, preferably over night in the fridge.
Build the skewers up.
Cooked over hot coals, for approx 40 Minutes until chicken is cooked.
