Meats Going Traveling

    I been doing smoked and dry cure still.

    Heading to Paducah, KY tomorrow to BBQ On The River to hang out with some friends.

    Here is some Amish style sweet bologna i smoked last week heading out with us tomorrow.





    Some dry cured salami (top) and flat pressed sopressata (bottom)

    You haven't forgotten how to make beautiful cured meats.... :thumbsup:

    I'm lookin' up Amish Sweet Bologna now....

    You might also find information looking up Lebanon Balogna or Sweet Lebanon Balogna.
