I am looking for the ultimate meat loaf recipe. Searched around but really didn't see anything to my liking...
Got recipes and tips?
 
I've got two. Here's the first one:

1/3 cup steak sauce (recommended: A1)
3 1/2 pounds ground beef
5 cloves garlic, minced
3 tablespoons dried thyme
1/4 cup Worcestershire sauce
4 eggs
3 tablespoons steak seasoning (recommended: Montreal)
1 cup bread crumbs


Preheat oven to 325 degrees F.

In large bowl, mix steak sauce, ground beef, garlic, thyme, Worcestershire sauce, eggs, and steak seasoning until well mixed. Then, add bread crumbs and mix until incorporated.
Place in 9 by 13-inch casserole dish and shape into a loaf. Add water to pan to come up to 1/4-inch of the meat loaf. Bake for 50 minutes until done.
 
Cheeseburger Meat Loaf

1 pound ground beef
1/2 teaspoon garlic powder
1/3 teaspoon salt
1 medium onion, chopped
1 medium bell pepper, chopped
1 cup grated Cheddar
2 tablespoons Worcestershire sauce
1/2 cup sour cream
1 cup crushed crackers (recommended: Ritz)
1 teaspoon seasoned salt (recommended: Lawry's)
2 slices white bread
Sauce, recipe follows

Preheat oven to 350 degrees F.

Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.

Sauce:
1 (10 3/4-ounce) can condensed cream of mushroom soup
1 cup milk
1 1/2 cups grated Cheddar
Chopped onions, optional
1 bunch fresh parsley leaves, chopped, optional
Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.
 
Italian Meatloaf:

2 tablespoons extra-virgin olive oil
1 red pepper, seeded, small diced
1 onion, diced
2 teaspoons (about 3 cloves) chopped garlic
1 pound ground beef
2 eggs
3/4 cup bread crumbs
1 cup grated Parmesan
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons chopped basil leaves
1 tablespoon chopped parsley leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce

Preheat oven to 350 degrees F.

Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.

When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top. Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
 
I haven't tried it yet but I will this summer. This is one I copied here I believe:

"About two years ago I decided to try a meat loaf on the smoker (my wife thought I was nuts).
I had her mix up the meat loaf recipe like she normally would with all of the onions and green bell peppers and ketchup and red pepper flakes and a couple of eggs to help the 80/20 beef stick together better and then formed it into a rectangular shape about 2 inches thick onto a square cookie sheet.
I fired up the smoker with some mesquite wood and placed the meat loaf on the grate with a digital meat thermometer stuck into the center of it so I would know when it reached its perfect temp without having to open the smoker.
I smoked it at around 250 degrees for probably 3 to 4 hours until the center registered 160 degrees.
Folks... that was the best meat loaf I had ever eaten and I have had my share of meat loaf!
I knew right then and there that this would be the meat loaf recipe my family would use for years to come... possibly for centuries to come.
If you want to try something a little different and blow everyone away then I recommend you give this a try.
I have listed a meat loaf recipe below that you can mix up and of course feel free to add, modify or take away ingredients as you see fit.
Simply form it onto a cookie sheet and smoke it like you would anything else with your favorite wood.

Easy Meat Loaf Recipe
· 2 lbs. ground beef
· 1 small onion finely chopped
· 1/2 green pepper finely chopped
· 2 cloves garlic minced (optional)
· 1 C. fresh bread crumbs or saltine cracker crumbs
· 2 eggs lightly beaten
· 3/4 C. ketchup
· 1/4 C. milk
Mix all ingredients in a bowl. blend the mixture about 4-5 minutes and then form onto a flat cookie sheet.
You can finish the top with ketchup if you like about 30 minutes before the meatloaf is finished smoking."
 
all you have to do is use your imagination..i just did a couple over the weekend and at the last minute i decided to stuff one with lump crab meat.

only your mind is the limit

Add a layer of packed brown sugar to fill the bottom of the pan , cover that with a 1/2 cup ketsup or so , then gently set your preformed meatloaf on top . Top with a little ketsup ( I try to get a little artsy and do a " I heart you " or whatever comes to mind at the time

It's really a soak in the sugar and juices meatloaf , but very tastey

Looks like some great recipes I got lucky last week and the meat market had it premade ready to be cooked. Cheatin is nice sometimes

I thank everyone for the ideas. With the talent on this site I knew I would get a few good ones. It would be pointless not to ask. I do know how to make one but I wanted to see some other ideas. Thanks to all who contributed!
 
Meowey, thanks for the link. I had heard of that post when looking for recipes but kept missing it. Got a few recipes there!!!
 
I grew up on the meatloaf recipe on the back of a Quaker Oats box and still go back to it more often than any other. Haven't tried smoking one yet but intend to. It must be the comfort food factor for me.
 
Vlap, let us know what you come up with. These all look excellent, I wouldn't know which one to try first.
