Meatloaf

The other day I found ground chuck on sale so had to get some. Made a bunch of meatloaf today ate a couple pieces for dinner and will give a couple friends some the rest will get vacuum sealed for quick easy meals.

Getting everything ready and measured out and poked holes in the foil pans for the grease to drain

I forgot to get the Qview but I also added 1/2 a diced onion and half a diced bell pepper.

Here they are ready to go into the smoker after mixing it all up

I forgot to mention I was doing 16 lbs lol

Each spice pack did 8 lbs

I made four 4 lb'ers

Into the smoker they went

After about 1.5 hours I cut the sides and pull the pan back to allow more smoke and more drainage. If you do this cut one end and watch to make sure the loaf is done enough to stay formed.

Looks delicious Jerry! Any chance you'll be smoking one for the gathering? Sure would like to have a bite or two!

Now you can't beat a good meatloaf. It's a good dineer then you get to have some sammies lately too.
