Meatless Beef Ribs

So, I send my son to the store and tell him "If they have a beef ribs (7 bone) at a decent price please pick some up". I don't know whether the butcher saw him coming or what but he came home with the thinnest rack of beef ribs I have ever seen. He said "The butcher said he had just taken off the ribeye so this should be tasty and they are fresh".

Not having the heart to send him back to the store I paid him, thanked him and put them in my freezer.

Fast forward 3 months...... I now have thawed out beef ribs that have minimal meat on them but I want to use them somehow.

All of you beef-eaters out there ----- other than throwing the out ---- any ideas?

MMMMMM.... MMMMM I feel a good beef stock coming on. Slightly smoke the ribs then boil them bones to make a good stock.
 
It's not uncommon for stores to sell the ribs off roasts like that or prepacked. There isn't much eating but what's there is tasty. They make great stock or soup. I make Pho Bo, a Vietnamese Beef Noodle soup with them that is great. Or, save them for a Mixed Grill. Rack of Beef Ribs, Rack of Spare Ribs and some Chix Leg Quarters. Now the little bit of beef is part of a bigger meal...JJ

Smoke or oven roast,treat them as if they were a prime rib with seasoning. After cooking pick some of the meat with knife and fork,then make a beef Barley Soup

SA, I looked at some beef ribs at Wally world a few days ago, looked like yours sound. They had very little meat and a lot of bone. I put them back !
 
The beef stock ideas are sort of where I was heading. I may put some heat on them for awhile first and see if there is enough meat to get a few bites off of each rib.

CrazyMoon - Right idea, but Toooooooooo late

Chef Jimmy - (always like your  posts) - however, these are already thawed out and nothing to go with them for several days...so I may just follow your first thoughts - smoke 'em and get a few flavorful bites off of each one.

Thank you JJ....... I have been on a liquid diet since thursday and was not looking forward to another night of ensure and chicken soup. Pho it is for me tonight. That flavorful broth will get me through tonight.
