Nebraska - Go Big Red!
Decided to give chuck roast burnt ends a try today for after the first Husker gamr of the season. I didn't have aNY perforated trays to use so I made some. I poked some holes in a foil pan I had then ran some skewers through another one to create a rack.

I cut two chuck roast up into 1 inch-ish pieces. I tossed them with some EVOO and some JB's Sweet rub. They are on smoker now with some cherry wood. I'm going to toss them with some Sweet Baby Ray's Honey BBQ Sauce in a few hours.

Turned out great! I pulled them after about 3.5 hours at a temp of around 225. Transfered them to some new pans and tossed them with the BBQ sauce. Back on the smoker at a temp around 250 for and out 3 hours. They were a beautiful almost black color. They had a perfect taste and good texture. Not quite burnt ends buy I will dub them poor man's burnt ends.

Paired them with some corn and dark beer to drown my football sorrows.
