and have issues with ambient temperature?

Tonight I put my jerky on like I do, at around 150-160. 6 hours in, meats still not where it should be.

Now for fun, I put the one probe inside, to read my smoker temp as I do, and left the 2nd probe dangling to see how cold it was outside.

But she only read about 41 all night... well it's below freezing here in NY, about 17 or so outside.

I took another temp probe I have (single wired unit) and put it outside, she stopped at 30, because it can't read below that... so somethings not right.

I decided to test the probes in boiling water... well surprisingly they were around the same. 212/214/216 they all read. So okay I put them in ice water.

All dropped to around 40ish, 40/42 ish... okay so they seem to be reading accuratly.

Right now I have them sitting on the counter reading the air temp... they are so far a bit off...

Been sitting a few minutes now and I'm getting:

68 on my single probe, 73 on both probes in the maverick.. so they are KINDA similar... i'll see how she reads in a bit.

Maverick is reading a tad hot though, it's only about 69 in my house right now.

I did put the single probe in the smoker... while maverick read about 145 the single probe read more like 120-130, i forget... but it was also just sitting on the grate, not secured in and for only a few minutes.

Anybody else notice these mavericks don't read the smoker temp properly? Or maybe I just had the probe on a hot portion of my smoker?

The top of my WSM only read about 110-120 while the maverick was reading 150... I can't imagine THAT much of a difference between the lid and temp probe, but it's also 17 outside so I figured the lid has the thermometer attached to it, thus it's reading colder.

Let me know.

The jerky didnt finish, it's in the oven right now to HOPEFULLY finish... but i'd be curious how everybody elses mavericks fan out.

As of the end of this message, mavs at 75/73 while the single probe is 68 still

and have issues with ambient temperature?

Tonight I put my jerky on like I do, at around 150-160. 6 hours in, meats still not where it should be.

Now for fun, I put the one probe inside, to read my smoker temp as I do, and left the 2nd probe dangling to see how cold it was outside.

But she only read about 41 all night... well it's below freezing here in NY, about 17 or so outside.

I took another temp probe I have (single wired unit) and put it outside, she stopped at 30, because it can't read below that... so somethings not right.

I decided to test the probes in boiling water... well surprisingly they were around the same. 212/214/216 they all read. So okay I put them in ice water.

All dropped to around 40ish, 40/42 ish... okay so they seem to be reading accuratly.

Right now I have them sitting on the counter reading the air temp... they are so far a bit off...

Been sitting a few minutes now and I'm getting:

68 on my single probe, 73 on both probes in the maverick.. so they are KINDA similar... i'll see how she reads in a bit.

Maverick is reading a tad hot though, it's only about 69 in my house right now.

I did put the single probe in the smoker... while maverick read about 145 the single probe read more like 120-130, i forget... but it was also just sitting on the grate, not secured in and for only a few minutes.

Anybody else notice these mavericks don't read the smoker temp properly? Or maybe I just had the probe on a hot portion of my smoker?

The top of my WSM only read about 110-120 while the maverick was reading 150... I can't imagine THAT much of a difference between the lid and temp probe, but it's also 17 outside so I figured the lid has the thermometer attached to it, thus it's reading colder.

Let me know.

The jerky didnt finish, it's in the oven right now to HOPEFULLY finish... but i'd be curious how everybody elses mavericks fan out.

I wonder if there's a hot spot in the smoker and the 17*F outside temp are having some kind of battle, giving unpredictable cooking chamber readings.  Especially if there's wind.  Some people wrap the WSM in a welding blanket when doing a smoke in cold weather.  If the single probe therm is more closely matched to your house ambient temp and reads lower than the Maverick in the cooking chamber, then it's probably the more accurate therm since your jerky isn't done like it usually is.  I've never had a boil test over 212*F because you'd have to be below sea level like in Death Valley.  Or it could be a barometric pressure thing.  The ice water test should always be 32*.  I don't know if cold weather affects the function of the transmitter.  I have a CDN DTP482 single probe/cable therm that boil tests at 211*F at 735ft. and ice water tests at 37*F.  So I'm 5*F high on the ice water test.  The lowest range on this therm is 32*F.  Since I'm almost at my low temp limit it may not be as accurate.

The lower temps though, can't drop past 41. I tried another ice water test again, the other probe errors out past 32 while my Maverick again stopped at 41... telling me maybe it can't read below 41, which is fine, at least it's working "properly"

I also used a different cut of beef. Flank steak over London Broil which I usually use, so that could be why, it was also cut a bit thicker...

I'm not as concerned so much with the ice water test.  Having the boiling test around 212*F like you have is closer to cooked food temps and smoker temps than 32*F.

and have issues with ambient temperature?

Tonight I put my jerky on like I do, at around 150-160. 6 hours in, meats still not where it should be.

Now for fun, I put the one probe inside, to read my smoker temp as I do, and left the 2nd probe dangling to see how cold it was outside.

But she only read about 41 all night... well it's below freezing here in NY, about 17 or so outside.

I took another temp probe I have (single wired unit) and put it outside, she stopped at 30, because it can't read below that... so somethings not right.

I decided to test the probes in boiling water... well surprisingly they were around the same. 212/214/216 they all read. So okay I put them in ice water.

All dropped to around 40ish, 40/42 ish... okay so they seem to be reading accuratly.

Right now I have them sitting on the counter reading the air temp... they are so far a bit off...

Been sitting a few minutes now and I'm getting:

68 on my single probe, 73 on both probes in the maverick.. so they are KINDA similar... i'll see how she reads in a bit.

Maverick is reading a tad hot though, it's only about 69 in my house right now.

I did put the single probe in the smoker... while maverick read about 145 the single probe read more like 120-130, i forget... but it was also just sitting on the grate, not secured in and for only a few minutes.

Anybody else notice these mavericks don't read the smoker temp properly? Or maybe I just had the probe on a hot portion of my smoker?

The top of my WSM only read about 110-120 while the maverick was reading 150... I can't imagine THAT much of a difference between the lid and temp probe, but it's also 17 outside so I figured the lid has the thermometer attached to it, thus it's reading colder.

Let me know.

The jerky didnt finish, it's in the oven right now to HOPEFULLY finish... but i'd be curious how everybody elses mavericks fan out.

I've done both the boiling and ice water tests with my ET-733 with no problems. Actually, I did the ice test wrong by sticking both probes into my freezer's ice hopper instead of into ice water but still got the 32° reading. I own a MES 30 and the control panel temp display shows hotter than the ET-733 by at least 20 degrees so I go with the reading on the Maverick.

Have you contacted Maverick or Redi-Check about the problem with the low temp readings?
 
Not surprising. My MES 30 Gen 1 always reads higher than my Maverick ET-733. That's the reason why I go by the temp display on the Maverick and not by the one on my MES.
