Maverick 733 Temp Issue?

I am new to smoking and have a MES 30 and also the Maverick 733. On the first smoke I put the first probe in the meat and the second on barbeque. It seemed to work great.

Yesterday I cooked baby backs and tried the 2-2-1 method and really did not need to monitor the temp of the ribs so I placed both in the barbeque (not in the meat). I left the setting to be #1 for Meat and the other for bbq.

I placed them on two differect grates. What I found interesting is that the temperature difference was extremely - in my opinion - sometimes 15-20 degrees between the two probes.

Any thoughts?
 
Yes I do. Typically the MES 30 is hotter on the right side than it is on the left. You'll also see temp differences between the four racks. Because of this I played around with dual probe placement, like you, the last time I smoked St. Louis ribs. I left them unfoiled as part of my experiment, something I won't do again.

Keep in mind I also use the AMNPS because I never use wood chips. I also use the ET-733 and, surprisingly, what I found was that during the 7 hours (about 2 hours too long) I smoked the ribs the right side was hotter but about 3 hours in the left side became the hotter side. I have no idea why. I thought it was because of the AMNPS but that theory doesn't hold together. Anyway, the temp difference between the two sides was about what you saw on your 733.

Many members here experiment with food and probes placement to find where the temps are most stabilized and even. @Bearcarver owns a MES 40 and uses a heat baffle to control and even out the heat difference between the two sides. He's told me the MES 30 doesn't need a baffle because of its smaller interior.
