Going to smoke a 4 pound pork picnic shoulder tomorrow on my new masterforge smoker from Lowes. It is the dual door. I'm going from using an old smokey electric smoker to this and need tips. My old one didn't have a water pan and said not to soak the chips before. On this one it has two vents and I'm wondering how to properly use them and how much water in the water pan? Hoping not to mess up my first smoke in it so any advice is appreciated! I also already did the door gasket mod to it.
