This past Saturday I picked up a GS40 and cabelas on sale 175.00

I have smoked pork loin ribs and chicken both turned out just fine

with the small water pan but I see what they say if you are going to do

a long smoke over 4.5 hours you will want something bigger/deeper

My plan is to replace it with a SS pan / dog dish and the wood pan with

a cast iron frying pan and a wireless temp probe, what other mods do

youall think are worth looking at?
 
In case you weren't aware, many here refer to that smoker as an MBXL. There is plenty of info here on mods. There is even an XL mod thread. I see some doing stacks and adding casaters seems to be popular.

 I love mine, but it is highly modified. I dont use a water pan at all anymore, and its converted to natural gas and controlled with a thermostat. Basically an outdoor oven. It is very consistant, and consistantly turns out great Q!
