Marinade for Bone-in-Pork Chops?

Ok guys, really need some help. Actually for my Pops in Florida. He called tonight and said his horseshoe club is having a cookout. The guy in charge of purchasing the food, is buying bone in pork chops. This cookout is for 100 people. He knows that trying to cook that many porkchops is a risk of them being tough from overcooking. Anybody have any suggestions for marinades or whatever to help him out. Your info is greatly appreciated. Thanks Aaron
 
I can't help with a pork chop marinade, and you certainly have a major concern with them being dried out.

Serve with a sauce. I like to make a pico de gallo salsa sauce for pork chops.
 
Now pork has always been one of those meats that people are scared to grill out. They don't want to get anyone sick so they always overcook it. If your father has a good butcher (old school) that can get him a good bone in chops and have them trim the bone back so you can cut it with a good knife. Then smoke them whole and then slice them and remember that alittle pink is good not alot but alittle bit. I did that a few months ago and then I have re-heated them and they are about the best thing that has ever came off my grill/smoker in years. Thanks for the information. I think I'll suggest that he marinates them in Italian Dresssing
