hello, i am putting together a smoker (electric) out of a manitowoc freezer. my concern is that it appears to have a rigid type of insulation. anyone have experience with this insulation before? will it work for 250 degrees or so? it is all stainless steel and looks pretty stout. thanks ,ed

If by rigid you mean the stuff that looks like expandable foam most people are going to tell you that it needs to come out. It will give off all kinds of toxic fumes when heated. You might call the manufacturer and ask about it but otherwise it is better to err on the side of safety.
