Using the kit from Hi mountain

Getting the casings ready

12#'s of pork butt and 3#'s of ground beef. Ready to mix

All mixed up, gonna run it through the grinder again with a smaller plate to help with the mixing, and smooth it out some.



The stuffing went great! No blowouts!

Taste test! Came out great!

Smoking these tomorrow!

I was going to ask about cure, but i think Hi Mt seasonings have cure in the mix.

That is not something to think about,check the ingredients make sure it has the proper amount of sodium nitrite.

Wasnt saying to just "wing it”. The Hi Mt SS kit i have has the cure in it. So it was just a comment to the person who asked..
