I volunteered to do a few pork butts for pulled pork for my local watering hole's pool team party. I am figuring on 25 to 30 people. I will probably do some chicken quarters too. There will be slaw, chips etc. My question is how do I calculate how many pork butts I'll need if I only do the pork....and if I do both the chicken and pork how much of each should I get?
This is my first Q for a group larger than 10.
Thanks in advance!

I am current doing a smoke for about the same amount of people. About 22-25 actually. I got 2 butts weighing in just shy of 16 lbs. Expect to lose some overall weight, rendering fat during cooking, and removal of the bone. I myself, guess I may lose around 4-5 lbs for this smoke leaving around 10 lbs finished product. Figure around 1/3 to 1/2 lb per person should put it pretty close, given there are smaller appetites present. Basically, figure to lose around 20-25%. Its not exact by any means, but it'll give you an idea.

For yourself, say 30 people, pork only. 20 lbs of meat, sub about 5 lbs loss that'll put ya around 1/2 lb per person. As far as having both on the menu, might try to get a poll of what folks would prefer in advance and go from there. Sorry, I'm not much help there.

My own situation, I got enough pork to feed everyone by my formula, but I also got Dutch's beans x2 and a fatty, and brats and hot dogs as a backup for the kids. I did something similar last year for about half, and I had perhaps enough left for a few sammiches. My 2 cents. Good luck with your event.

I seem to remember Travcoman45 saying to figure a loss of 40%-50% after cooking and use 1/4 lb per person and a 1/2 lb if they are all men cause they'll eat two sammies easily.
I think I'd go 20-25 lbs

I fed a bunch about this size yesterday at work. I had cooked 3 briskets (small, at 9-10 lbs each), 2 butts (8 and 9 lbs) and a double+ (#10 can of Bush's baked beans). I probably had 2 lbs of brisket left, 4 lbs of pork and just a couple of servings of beans.

2 butts will probably get you covered, but I would do 3 just to be safe. The worst that might happen is that you'll have some left over.

I also had a double batch of SoFlaQuer's Finishing Sauce http://www.smokingmeatforums.com/for...ad.php?t=51933 and kept adding it as time went on so that the meat wouldn't dry out.

Mr Porky, I also recommend that you make a few fatties. Once people get over their initial disgust at the idea of 'that much sausage' and actually try it, they will disappear quickly. Again, the worst that can happen is that you'll have a little left.

Leftover BBQ doesn't last long, either. It always finds a happy home.

Good luck and good smoke

Thanks for the insight...I will figure a little less than 1/2lb per person, do a few fatties and some chicken 1/4s that I'll smoke then seperste into thighs and legs. I've seen these guys in action...eating free food....they could be a biblical 8th plague. :)
