Hi everyone! I just got interested in smoking and have learned a lot from this site already. I was waiting on a Brinkmann All-In-One cooker so in the meantime I smoked 2 chickens on my Weber grill and they came out very well, but I think they could be better. Then the Brinkmann got here so I set it up and besides being a horrible POS the paint burned off the first smoke and nothing fits right! But even though all the coals burn way too hot on it I smoked pork ribs and adjusted the times for the 3-2-1 and they were the best ribs I and the wife ever had - with no sauce even. Anyway I'm 53, live in Pahrump NV, and home on disability so I can put some time into doing this. I also make custom knives and have a site at www.DLKnives.com so check that out.
