Picked this new toy up on Craigalist this week and had to try her out. This is my first real cook with charcoal other than a few beach cookouts.


Spatchcocked and rubbed a 7.5 # roaster with a paste made of lemon juice, olive oil, garlic, salt, pepper, and Italian seasoning. Shooting for 400 degrees cooking temp with a little apple thrown on coals. I always spatchcock when roasting them in the oven at 400 so I played around with the vents to get it around 400. This thing is a tank. Holds temps as well as my weber gasser. Here she is about an hour in when I added a few more coals.

So far so good. I'll add some pics of the final product.
 
Looks great. Looks like you got a good buy on the grill.
 
Thanks! Definitely glad I got it. I really love the whole charcoal experience. The flavor is so different from a gas grill. And it's nice to be able to toss some wood chunks on without having to mess with foil smoke pouches or a smoker box. The chimney starter is a godsend as well. Can't wait to cook something else on it.

Thanks Foam! Haha you're right... I have it real bad. Second grill I bought in 2 weeks, both on craigslist. My wife is keeping a tally on how much I spend so she can spend equal amounts of money, free of my complaining. The little one liked the asparagus as usual but really liked the chicken which we were happy about because lately she doesn't want to eat much meat. I see from your posts that you use an MES....that would be nice to add to my fleet haha better get on craigslist fast!

Thanks so much! Yeah, the Payback is great. Its from the Speakeasy brewing company. bI found it in my local supermarket. It's a porter which I am a sucker for. My other new favorite is Lagunitas Cappacino Stout!

With the exception of Frankfurters (that's pale with onions), I always cook with a Heineken Porter.  

If I drink beer, I like a oatmeal stout (Hard to come by)! Or LoneStar longneck!

You can be all alone and lost in the middle of the swamp or desert, break out a washtub of ice blocks chiped down and a couple a cases of lonestar long necks. In a matter of minutes someone will ask where you want the band to set up.....ROFLMAO!
