Fear not the name, as it is just an old reference to an accident with an m-80 so many years ago... The nickname sort of stuck with me. I am new at this smoking business, but learning quickly. I have a master built electric smoker and absolutely love it. So far. I have smoked beef (mostly steaks), Pork (Ribs, chops, roasts, bacon), chicken (boneless thighs are my favorite), and fish (salmon, tuna, swordfish, and tilapia). Have been very successful and have created quite a few tasty and memorable offerings in just a few months. Many ideas I have gotten from this forum before joining, and have found it most helpful. Glad to be able to contribute to others.
 
Yeah, I feel pretty comfortable with what I've done so far... My only attempt that I wasn't happy with was fish. Used a brine and it was very salty. Still learning.
