Hi everybody. I've been smoking for a few years now, started slow, bought a NB offset firebox smoker and made the suggested mods to it, now have that one as well as a MES. Use the MES more often than the one I have to build a fire in, because I'm lazy. I'm born and raised in CA, married with a daughter (not quite 5) who loves helping dad make the brine, marinade the meat or rub the pork. We love to camp, and generally just be outdoors. I'm an amateur homebrewer with a 10 gallon all-grain setup, although it's been a year or two since I brewed a batch. Not sure what to say, I've been amazed at all of the things I've learned just in the last month or so that I've been reading. Fatties? ABTs? Smoking almonds? Where has this place been all my life! Smoking up a storm this weekend, I'm trying a new technique on the pork shoulder, it's a sticky in the pork forum, I've never cooked the shoulder that long. Explains why it's always hard to pull, the closer to the bone you get. Also going to try the finishing sauce. Made a great fatty (with the fancy bacon weave even) just based on the great throwdown shots I browsed. Took some pictures, so may have to put up a q-view or two once I figure this thing out. My first attempt at ABTs were absolutely fabulous as well. Nice to meet you guys, and I look forward to learning and sharing even more.

Welcome to SMF glad you joined us. Sounds like you've jumped right in. I think you'll like the pulled pork if you go by that sticky and the finishing sauce is awesome as well. You'll find a sticky in the fatty section on a good technique by Capt Dan as well. Have fun and happy smoking

Foxmid, welcome to SMF. Boy it sounds like you got bit by the smoking bug but hard. I hope you understand that there is no cure for this condition.
