How many? I would first think of pulled pork, you could cook it ahead, pull it and be ready with a little of JJ finishing sauce in a crock pot to heat it (or a chafing dish if a big office), You want to do different, bake a bunch of potatoes and serve the pork with a light BBQ sauce over the baked potatoes, maybe throw out some sour cream and cheese for folks who don't know what's good. Throw in a cole slaw side and its a full meal with nothing much but a set up needed the day of serving.
 
I've done pulled pork several times for my office. Just like Kevin said cook it ahead of time and the reheat. Since my office doesn't have an oven I used crockpots.

You could do pulled chicken too. Smoke a bunch of thighs ahead of time and pull sauce then reheat.
 
You could do a sandwich platter. Smoked pastrami, corned beef, ham, montreal smoked meat and sliced smoked chicken or turkey. If you had more time you do smoked cheese but some regular cheese sliced up. A plate of bakery buns and some condiments. No need to reheat and really good!
