My good friend, ISUTroutBum, suggested I stop here for a look. I have to say that I'm very excited to get my feet wet here. I just got the new 22" WSM and have done four smoking sessions so far. Nothing too elaborate to date. I've basically done some meat appropriate rubs and smoked away. It really doesn't take much to make meat taste fantastic on a smoker! I've done Kingsford charcoal and either apple, cherry or mesquite smoke woods. The method I've used for burning so far is the "minion method" which I found at the Virtual Weber Bullet website...another great smoking reference, especially for WSM owners. Spices of choice come from Penzey's, although I did win 6-8 big bottles of Weber-branded spices that seem to do the trick pretty well. My goal now is to expand my horizons by absorbing all I can from SMF!
