I own all COS 1) New Braunfels Black Diamond Smoker(15 years old) that I use for BBQ, 2) Brinkman Trailmaster Limited that I only use for smoking. I've done some mods to it: tuning plates, firebox baffle, charcoal basket, extended chimney to cooking grate, water pan, maverick et732, thermapen, still have to seal the door with rutland 500 degree silicone(took 16 hours to smoke my first Boston Butt), and last but not least my grill is a Chargriller 2121 Super Pro thats only used to grill.View media item 233310

I live in south jersey and am currently partially disabled so I have alot of time to experiment. I was a chef for the last 30+ years so I make all my own rubs and sauces and mops but I'm always looking for new ideas

Welcome to the forum...GREAT to have another chef on board!  This is a great place to learn and ask questions.  Sounds like you have some great equipment. Keith
