I prepared some Mad Hunky Poultry brine last Saturday for a Sunday Vortex smoke on the Weber and then I get called outta town for the week. All I could do was leave the wings in the brine and hope for the best. Monday rolls around and I hear from the Mad Hunky himself saying it "should" be just fine BUT let him know..LOL Jump ahead to today and here are the pictures that prove a week in the brine is NO PROBLEM even when I took them to 195.
