Neat Forum! I have just jumped in to / invested-in the smoked meat adventure, and this looks to be a great resource.

I have tried to do a little homework to get myself set-up. The NB Hondo was about the best in my low price range so I picked one up last weekend, and made a few mods based on my internet research...added a baffle at the hole to the firebox, mounted the thermo near the grill, made a charcoal basket, & lowered the chimney to grill level. I have a Maverick ET-73 thermo on it's way in the mail and have given the Hondo it's 1st "burn" with the entire interior coated with veg oil, about 5 hours. I am hoping to try it out with a brisket this weekend, we'll see how it goes.

I have just signed up for the eCourse, so Im sure that will be a great resource.

Thanks to all of you who take the time to add posts which are sure to really help the newbies like me.

Sounds like you're on the way a brisket is a bit of a challenge for a first smoke and can take more than 10 hours for a large one, but not impossible for a newbie to do with good success.
Its not rocket science and if you have the fine folks here on SMF to guide you through it. You'll do fine.

First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Welcome to the SMF, I think it's the best place to find anything out about smoking. If it's not known here, it's probrably not worth knowing, orrr we just haven't done it yet.
