Going to be smoking some hot dogs, first attempt. Using beef and pork for now until we get the recipe down and start using venison. Looking for info on best wood to use. PLEASE ADVISE

I have only used hickory.  I could see pecan or oak being good as well.  Hotdogs are pretty heavily seasoned so I would stick with the stronger traditional woods, but people seem to find some good stuff off the beaten trail.

Thanks I have been partial to apple in the past but have used oak in making pastrami. wasn't sure with hot dogs, didn't want to over power but will try hickory or oak.

The water bath at the end will cut some of the smoke flavor.  That's why I like a strong smoke on them.

Good luck - homemade franks are different but really good!

Post some pictures of your work.

I have always used oak, but only heavy smoke for about 1 hour, then poach in water to finish cooking them. This gives a nice smokey flavor & keeps them nice & plump.
