Hey All,

Wanted to pick your brains. I want to make 2 racks of spares for a get together on Saturday. Realistically, I will have 5 hours at most to cook that morning. Was wondering if anyone can share their experiences smoking spares at at around 300 degrees. I know guys like Steven Rachlein smoke them at medium indirect heat which is about 325-350 but I have never tried it that high. Seems all his recipes require a lot of mopping or spritIng perhaps to keep the rub from burning or drying out. Just wondering if anyone has had success with higher temps and if so what would be the ballpark time for a rack of spars at the higher temp you have cooks them.

For spares at a higher temp you could do a modified 3-2-1 method. at the higher temp your talking about you could probably do a 2-2-2-.5.
 
I've run at 280ish and got done in under 5 hours.

If you handle them right you can mostly cook them the day before and finish them Saturday too. Take them through the foil phase, cool properly, put in fridge and finish on a low grill Saturday.
