My name is Jim from South Carolina.  I'm sort of a novice at smoking with an electric smoker (USSC, United States Stove Company). We also have a Weber natural gas grill that gets most use, a Weber charcoal grill.and a remote thermometer.

I've been getting Jeff's newsletter for quite a while but finally joined the forum in hopes of becoming better at outdoor cooking.

I have just started brining pork and poultry before smoking and everyone has said it tastes better. Why did I wait so long?

I don't have a Twitter or Facebook account and probably never will.
