Long time cooker, first time smoker

Hey y'all from Charleston, South Carolina,

Recently purchased a Masterbuilt 30" smoker with the glass door from Cabelas.  I have not had much success with my butt being as "fall apart" as I would like.  After finding this site, I have already figured out what I have been doing wrong.  With everyone's help, I am confident my smoker will be the envy of the neighborhood.   And more importantly, my bragging rights will be restored.  I have been working for years on concept food for a food truck I want to get and this smoker is one of the last items needed for it.  Glad to be here and I feel this might be one of my favorite sites.
