Got the best present a guy could ask for this Christmas... a new WSM cooker. This past weekend I finally completed my first smoke... went poultry because of the cost. Figured there was a high chance of mishap. But I followed the directions from a great book I picked up... and it turned out perfectly. I attached some pics. 2hr smoke over some lump wood charcoal with 5 -6 chunks of hickory. Chicken Mojo Criollo. Enjoy the pics and let me know what you think... can't wait for my 2nd smoke!

I just saw this post in the other block, glad you checked into roll call.

Great Chrismas present indeed! You have one of the finest pieces of smokin hardware there is right there. Most of us had to build ours out of trash (UDS). Going poultry for the first run was a good move on your part. Like you said the cost is low and the probability of messing up is good. Now you can go get those ribs, maybe a bork butt (I suggest a boston butt) or maybe even a big chuck roast. The butts and chucks take longer to smoke which gives you plenty of time to learn fire management and smoke control. I don't see a digital probe-type thermometer so put that next on your list. They are about 12-15 bucks at Target or Wall-o-China Mart. Good job going with the charcoal chimney to boot. Happy smokin' and keep up the good work. Keep the q-view coming!!

First off Welcome  to SMF. Man you look like you are ready to rumble with that yardbird.  You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too.  So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Welcome to SMF, you're in good hands with these people. Nice looking chicken, great job, and it only gets better from here. But just one thing, keep in mind a lot of us are in freezing temps with snow and ice, cool it with the shorts, ok? Just kidding... we are jealous.

I'm officially jealous...not only of your green grass but also your WSM.  That is on my wish list.  I love my MES & my horizontal SNP, but I am looking for longer holding temps in a charcoal smoker...which is what I hear that puppy does well.  Nice lookin' yard birds ya got there.  Like mballi said above (even though he is a gator fan) you find a wealth of information here.  I found this website about 3-4 years ago and have since had many successful smokes.  (I smoke food, too).

Wow, what a great reception! Glad I found this forum... looks like a wealth of info and great people to boot!

@ Pit 4 Brains... next smoke is this weekend. Doing one more chicken run before stepping up to some ribs or a butt. This time with a nice brine. I will put up some pics for sure.

@ Porked... sorry about the warm weather pics hahahahaha. Got a nice heat wave which was perfect for the inaugural smoke. Next time I'll include some girls in the pics to make you feel better!

Very nice looking chicken, congrats on your first smoke, looks like it was successfull!  Now I have to agree with Porked on the shorts jelousy factor. I woke up to -16 F this morning and I have to come on here and see you in shorts? Also, why are you stacking stuff on that hot tub? Let's see, smoking up some meat, cold beverage in hand, sitting in a hot tub! Not sure it could get any better than that!

Sorry for the rant, winter blues are bringing me down. lol
