Hey guys, im new to the forum and had a question. Im doing an 11 lb pork butt Thursday, for a birthday party friday afternoon. My fitst question is if i can start it at around 3a.m., then go back to bed for a couple hours? I dont want to stay up late Thursday night. Secondly, what is the best way to reheat the pork friday for the party? Easiest for me would be crockpot, but i dont want to dry the meat out. Thanks.
 
Depending on your smoker you can go back to sleep if you want. If you know it will maintain the temp you want to cook at then there is no problem with that plan.

You can reheat in a crock pot. Or put in a disposable foil pan and cover with foil and place in the oven @ around 200. If you're worried add a finishing sauce or a bit of apple juice when reheating.
 
I sat and watched the last couple smokes and the temp stayed consistant at 225. I suppose it will be fine for the first couple hours. Thanks.
