Hello Everyone,
I've been looking for this type of forum for months. I made a smoker out of a 275 gal. tank and I was off setting in the tank and had good results. Now I have added a wood stove to off set with which gives me the whole grating surface for smoking. Having trouble getting the meat as tender as before. after reading here I will try some different things. Looking forward to getting to know you all.

Glad you found us! Post some pics of your smoker.....the folks around here that built their own rigs may have some suggestions to help get your smoker back under your control.....

I will, need all the help I can get. Will be cooking 3 picnics, 1 butt, 2 chickens tomorrow, will try then. Thanks Eric for the info.
