Folks, I've yet to try this smoked, but it's the best meatloaf I've ever had. I'll be trying it soon on the smoker. It's my wifes recipe.
1 tbsp olive oil
1 medium onion, chopped
1 celery stalk, chopped
2 cloves garlic, minced
1 tbsp Louisiana pepper sauce
1 tbsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp dried thyme
1 bay leaf
1/4 cup milk (2% will work fine)
1/3 cup ketchup (heinz won't work :D )
1 lb ground beef
1 cup bread crumbs
1 egg slightly beaten
Heat oil in a large skillet. Cook onion until soft. Add celery, and garlic; cook until pepper is soft. Stir in seasonings;
simmer 5 minutes.
Stir in milk and ketchup. Remove from heat; let cool. Remove bay leaf.
Preheat oven to 350 degrees F. Grease a 9" loaf pan.
In a large bowl, combine seasoned mixture with bread crumbs, ground
beef, and egg. Place in prepared pan; bake 75 minutes. Let stand 15
minutes before slicing.
