Linda's Cajun Meatloaf

Folks, I've yet to try this smoked, but it's the best meatloaf I've ever had. I'll be trying it soon on the smoker. It's my wifes recipe.

1 tbsp olive oil
1 medium onion, chopped
1 celery stalk, chopped
2 cloves garlic, minced
1 tbsp Louisiana pepper sauce
1 tbsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp dried thyme
1 bay leaf
1/4 cup milk (2% will work fine)
1/3 cup ketchup (heinz won't work :D )
1 lb ground beef
1 cup bread crumbs
1 egg slightly beaten

Heat oil in a large skillet. Cook onion until soft. Add celery, and garlic; cook until pepper is soft. Stir in seasonings;
simmer 5 minutes.

Stir in milk and ketchup. Remove from heat; let cool. Remove bay leaf.

Preheat oven to 350 degrees F. Grease a 9" loaf pan.

In a large bowl, combine seasoned mixture with bread crumbs, ground
beef, and egg. Place in prepared pan; bake 75 minutes. Let stand 15
minutes before slicing.
 
Those ingredients really make it sound tasty. I'm a big fan of Cajun food, so I'm gonna try it sometime next week. Man it's putting me in a Cajun mood...Laissez les Bon Temps Rouler: (lez-ay lay bon tom rule-air). That means "Let the Good Times Roll" in Cajun Country.

Smokers full this week end, but that'll be the start for next week end. Found a new meat store that has all kinds of cheap meat. (still can't find Boston Butts). Now I have about 15lbs gound meat. And that sounds really good. Thanks.
 
Wow! Cheap meat in Philly? Do tell, it might be worth a trip from Delaware...?
 
I finally tried this one this evening on the smoker. I'm sorry that I don't have pics. I've got to tell ya, it was incredible. Linda prepped the loaves and I smoked them, then she made mashed 'taters, and jalapeno gravy. Friends, I must tell you, this was a meal worthy of eating!

Tomorrow, I'm dong spare ribs. It's good to be home! (Traveling with sales is quite a chore!)
 
I've been asked to share the jalapeno gravy recipe, so here it is.

Jalapeno Cream Gravy

1 tbs butter
1/2 cup onion, minced
1 tsp garlic, minced
2 large jalapenos, seeded and minced
2 cups heavy cream
1/4 tsp black pepper
1 tsp salt
1 pinch cayenne
1/4 roux (recipe below)

Melt butter and saute onions and garlic 2 to 3 minutes over medium flame.
Do no brown. Add jalapenos, cream, and seasonings and cook until onions are soft. Whisk in roux, taking care to dissolve any lumps. Cook 3 to 6 minutes until the starchy taste disappears and gravy is thickened. Taste and adjust seasonings.

Blond Roux

Equal parts unsalted butter and flour, cooked for 5 minutes over medium heat until blond colored but not browned.
