I grilled some of these up this weekend and brought them in to work. The guys loved them and a few asked me for the recipe. I figured I'd share it with you guys too. There are very similar recipes out there but this is one that I threw together and it worked out pretty darn good.
1/2 of a pork loin cut into 1" thick chops (roughly 2.5 pounds)
Marinade:
the zest of 3 limes
the juice of those 3 limes
1/2 cup lemon juice (I used the stuff you put in iced tea because it was all I had but fresh would be better)
3/4 cup water
1 tablespoon Montreal Chicken seasoning (everyone should have some of this stuff (and Montreal Steak seasoning) because it's delicious!)
1 teaspoon celery salt
2 teaspoons granulated garlic (Garlic powder could be used if you don't have granulated garlic)
3 or 4 dashes of your favorite hot sauce
3 or 4 dashes of zesty italian salad dressing (I just added this to try it and I liked it.....you don't need it if you don't have it)
Mix all the ingredients for the marinade very well...(I put them in a container that I could shake up)
Place the cut pork loin chops in a gallon ziplock bag and pour the marinade over them. Get as much air out the bag as you can and seal it up. Massage the chops in the bag for a minute or so to ensure all the meat is exposed to the marinade. Place in the fridge for 4 or 5 hours prior to grilling. Flip the bag over from time to time to ensure the marinade is evenly distributed throughout the chops. Grill the chops.....DO NOT OVERCOOK!....
