Hello fellow smokers!

My name is Clayton. I am an Australian ex-pat living in Japan the past 14 years. Always have loved a barbie and cooking in general. A few years ago I purchased a home smoker by chance and after my first try at smoked salmon was instantly hooked. Since then it has become a bit of an addiction. I have also been making sausages, bacon, and whatever I think might be good with a hint of smoke. (Try some fresh soy beans if you can get them). I have been getting rave reviews from my family and friends for these past few years, and as a result, I am taking a leap of faith and will open my very first restaurant in downtown Tokyo in a month or so. Never thought I would be going down this road in a million years, but that's the beauty of life's journey. You never know what will pop up along the way. 

Looking forward to getting to know you, and sharing some of the magic together.

That's great! Thanks. Actually, I am going to purchase a Memphis Elite pellet smoker in the next few days. Might need to ask some questions about using it until I get the hang of it. Seems pretty straight forward though. Know of anyone who has one?

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

My logo includes the kanji: 豚吉  = tonkichi (lucky pig), which kind of sounds like Ton's Kitchen.

I don't have a front yard for the kamado, so my pig mosquito repelant holder at the door will have to do.

Pick up the keys tomorrow as there were some repairs needed. Very excited. Will post some photos when I get the place looking good.
