I saw this clip from BBQ Pitmasters:



A guy on there talks about his Lexington style rub recipe and it sounds amazing, so I want to try and make something similar. He lists the ingredients. Can anyone help me with some advise on what ratios of each ingredient to use? These are the ingredients he lists:

Salt

Pepper

Onion Powder

Garlic Powder

Cayenne

Chili Powder

Dry Mustard

Sugar

Cocoa Powder

I am also in search of a good vinegar based finishing sauce. So if anyone has a tried and true recipe, pass it on! Thanks!

This is only my guess as to what I would start with.
