Hello!! I posted a greetings a couple of months back in the wrong part of this great site so I thought I would give it one more try. All I saw for response was two people going ping and pong which either tells me I screwed up and they were having a good laugh or something that I totally did not understand. I am getting back into smoking and making home cured meats and sausages and this site is the perfect place to learn and see what others are doing. I really want to learn to make what I call a Kosher Salami for the flavor and not the Kosher status. Learning how to stuff and smoke or cure this type of sausage will be a challenge and any recipes or advice close to this type of salami would be greatly appreciated. Once again,I really enjoy the newsletters and all the great information you people share. mds51
