Thank you for so quickly approving my subscription. My name is Gerry and I live in central Ontario, Canada. With my wife and 4 kids we have a small hobby farm. We raise chickens, ducks and pigs for our own consumption. We also have alpaca's and horses. Needless to say we are always a pay cheque away from broke:). I have butchered my own pigs and ducks successfully. I am interested in taking it a step further and learn to preserve by curing and smoking. I know nothing about the process other than what I have seen on youtube or vimeo.  I don't know what kind of equipment I need but I am pretty handy and I'm sure I can make do. I look forward to learning the art of smoked/cured meat. I would be real interested there was someone locally that I could work with or that could mentor me. Thank you all.
