Looking for a good lemon pepper recipe.  Going to use it on a cornish hen.

Nothing spice or hot.

Lemon Pepper and what? You can sub in Lemon Pepper for Black Pepper in any rub recipe you like. Give some more details and I will work with you to make a custom rub...JJ
 
I dont know.   Wife wants lemon pepper chicken.    Never used lemon pepper before.
 
If she's looking for a string lemon flavor, squeeze fresh lemon over the bird yen minutes or so before smoking. Use fresh cracked black pepper. Stuff the cavities with lemon. Lay slices of lemon on the birds, smoke high temp. We add cilantro, or big leaf parsley in the cavity and under the lemon slices sometimes.
 
I like to make a compound butter with lemon juice, lemon zest and black pepper. then spread it over and under the skin. You can also add other herbs like thyme and rosemary
 
Lemon Pepper Seasoning is a mix of Salt, Dried Lemon Peel, Black Pepper, Garlic, Onion and herbs like Parsley and Oregano. McCormick makes it and there are other brands with various ingredients. If you can find plain dry Lemon Peel, you can make your own blend adding what you like and control the salt.  It has been around a long time, I first tasted it on steak 40 years ago...JJ

I would make this...

Lemon Pepper Rub

1/4-1/2 C Turbinado Sugar

1-2T Lemon Peel

1T Black Pepper

1T Granulated Garlic

1T Granulated Onion

1T Kosher Salt

2tsp Dry Oregano

1tsp Dry Parsley

Optional:

1tsp Dry Rosemary 

1tsp Dry Sage

1/2tsp Dry Marjoram

1/2tsp Dry Thyme

1/2tsp Dry Ginger

Rub the Herbs between your hands or pulse in a Coffee Grinder to break up the leaves and release the essential oils.

Leave out the Salt if you Brine your Chicken.
