Leftover smoked pork loin

Any of you guys or gals have a great sauce recipe I could use tonight to mix it up on leftover smoked pork loin?
 
Welcome aboard!

 Try Hoppin' Juan. It's just like Hoppin' John, but from much further south.

3 cups chicken stock.

1.5 cups rice

1 15oz can black beans, drained

1 small onion diced

3 jalapenos seeded and diced

2 medium tomatoes seeded and diced

1/2 cup cilantro chopped

2 cloves garlic chopped

1tsp cumin

1tsp chili powder

Juice and zest of one lime

salt and pepper to taste.

Meat of choice (in this case, your leftover pork loin)

Add the zest and 1/2 the lime juice to the stock, bring to a boil, add the rice, cover and simmer for 20 minutes.

Once rice is cooked, add cilantro and let sit for 5 minutes. This will infuse the flavor much better.

Add all the other ingredients to the rice, mix well and you're done.

Garnish with sour cream and guacamole.
