    I broke in a new smoker last weekend so I smoked a lot more meat than I could eat.  I gave some to friends and family but today i still had some pulled beef in the fridge.  My wife said she was tired of eating smoked foods and wanted Mexican tonight.  So this is my version of Mexican.

    First attempt at a Bacon Taco Shell

    Mixed up some coleslaw while the shells were in the oven

    Not knowing how the taco shells were going to come out i decided to hedge my bet and make a burrito just in case,

    The bacon shell didn't keep its shape.  I'm going to need to do some research on that.

    Wife wasn't happy when i told her my plans but when she saw the plate her tune changed.

    I did the bacon taco thing a couple of weeks ago just for kicks. You can drape it over and through the oven rack and it will come out perfect. I also do crispy corn tortilla's like that sometimes if I have somebody over that likes those kind better. Looks great though. You know you can freeze that pulled beef and it thaws just like you made it that day. Same with pulled pork and chicken. I suggest you invest in a vacuum sealer if you don't already have one. Great way to put leftovers away for future use. It is quite amazing how fresh and perfect your stuff ends up that way.

    Thank you for the tip!  I will try the oven rack instead of the foil.  That might help with some of the curling too.

    I have frozen food before but there wasn't enough left over to worry about this time.  A couple of years ago I froze some pulled pork in a zip-lock freezer bag and some in a vacuum sealed bag.   Dated them and waited a year (actually 364 days but whats one day).  I put each bag in its own slow cooker and went to work.  You couldn't tell the difference between the 2 and you couldn't tell that they weren't freshly smoked.
  4. That looks tasty! I always smoke more than I can eat then vacuum seal for later. I heat in the bag in a pot of hot water. It is just as good as the day I smoked it.
