Making spare ribs today using the 3-2-1 method. I just took them out of the foil and back in the smoker for the last hour. It was very messy and hot trying to get these ribs back in the smoker without them falling apart. Does any one just open the foil for the last hour or do they need to be on the rack? Thanks.
 
I don't think that they need to have to be on the grate.  Get your self some carving gloves and then it will be a lot easier to move them from the foil to the grill.  Another tool that helps is a BIG set of thongs from a resturant supply company.  If they are two fall apart for you maybe a little less time in the foil next time.
 
Thanks ECT01, but if I come home with a thong my wife is going to leave me. jk. I knew what you meant.
 
I have a 8" spatula and some BIG tongs that i use to move full racks.

 You may want to back of the time in foil. 15 min at a time till you get them how you want them .
 
I got me a pair of these and they're great and very inexpensive.....gloves

As the others have said, adjust your foiling time if you don't want them falling off the bone.  I don't like to go more than 1 to 1 1/4 hours in the foil.

Another option it cut your cooking temperature back to 210-220°, then don't foil the ribs at all. If you cook them low and slow they will still be very tender, but they wont fall appart on you.
