Hi All...

Sorry for the delay with my Turkey Day report... it's been a busy week!

I took a big risk and smoked my first turkey on the big day. 13 pounds of yummy goodness. Brined for about 12 hours with salt & sugar (of course), some white wine, fresh rosemary, thyme, and a pinch of this and that. After the brine, I added a sliced apple, sliced onion and some celery to the cavity. Slathered with mayo and covered in a McCormick's poultry rub and threw her in the smoker. I also bought a hickory smoked spiral sliced ham and added some more smoke to it. Everything turned out fantastic. Leftovers were gone the next day.

Took some of the bird and used it in a turkey soup. Boy, does that smokey flavor shine in a soup!

One of my guests. He ate a lot. He was my new smoking apprentice for the day and wanted to learn everything there was to know about the process. I think he was a bit overwhelmed!

Looks fantastic. I was not brave enough to do my first bird for T-Day and did not have enough time before hand for a trial run. I will do one some time this spring and see how it turns out.

BTW, I use the same "identification technique" on my beers cans ... but I turn it the other way.
 
Thanks, it really takes decent pics for a camera phone (it's an LG Envy), but I really need a digital camera for the drool effect!
 
Matty, congrats on the great looking Q. Regarding your buddy...I only wish I could have produced the same effect on my ex...

I am a little confused. You said you did a Turkey, but the photos show a couple "Hams" as well.
