Last smoke in my first house?

  1. Well, it's a bittter-sweet day. This will probably be my last smoke in my first house, so I want to preserve the memories.

    I had this house built when I was in my 20's, and I've lived here for almost 3 decades. My neighbors are going on vacation...leaving tomorrow, so I want to do some spare ribs. I did some recently and took a few over to their house, but the husband ate all the bark before his wife got home, and I want to make sure his wife gets some this time!


    The sweet part is that the house we're moving into has an outdoor picnic pavillion (among other outdoor amenities): my WSM and grills will have a nice home! And...I'll only be a few miles away: still in the same zip code.


    So, on to the ribs. Got the ribs from my local meat market again: they do all the prep work before they package them, making my job easy! I rubbed them with mustard, and made the sweet dry rub that I listed in TwoBeanBBQ's post:

    This time, I remembered the pepper! Here they are all rubbed down. They're wrapped in plastic and sitting in the fridge while I get the WSM ready (sorry that the focus isn't that good).

  3. Right before foiling. Not sure why the one on the right didn't recede much from the bone...maybe it's just the way it was cut, or that it was more over the foiled drip pans than the other one, but it looks ready.

    If TwoBeanBBQ is looking, you can see at the bottom where I run my pit probe through the WSM. I don't use meat probes for ribs. The pit probe came with a clip to hold it in place, but I let it hang just under the grill. The foiled drip pans on the lower grate help keep the drippings from getting into the water bowl, making it easier to clean up. I'm anxious to see your first crack at the WSM, and see how you like it!

  6. OK, OldSchool, here's the Q-view of the final product. (And thank you too, Dave, for watching!)

    I have to admit that I took a bite off of one of the tips (near the top of the picture). They turned out great! My neighbor and his wife aren't home yet, but their daughter and son-in-law are over there. I'm headed over there to give them a treat right after posting this. The son-in-law is a huge fan of my cooking, and is always asking me for advice...funny, because I still consider myself a novice!

    I didn't put any BBQ sauce on these, and as usual, I always forget something: I forgot to put apple juice in when I foiled them, but they're still moist, and very good!

    Can't wait to post my first smoke in my new home, but after almost 30 years, we have a lot of stuff to pack and move! It might be a while......
