I just got this little guy as a gift and have been having a hard time getting over 200 degrees. I got to 250 the first day I plugged it in with no water, no wind at 70 degrees with no food in it. Break in period....

Since then I have used it twice and cant get above 200 degrees. I have installed a gasket and latch to try and retain more heat with no success of reaching over 200.

Should I not use water?

Should I put sand in water pan?

It has a 1500 w element should that be replaced?

I have attempted to cook 2 racks of ribs on separate occasions with water in the pan with no luck of getting over 200.

Last night I smoked sausage with no luck of getting past 200 to get an internal temp of 155 

What are your thoughts?

Are you going by the thermometer on the smoker? They are almost always off by a long way. Lots off by 50* or more.

I have been going off the thermometer. I just ordered a Taylor precision digital thermometer and timer to eliminate that.
