OK this is not a smoked meat recipe but I just recently went to a Korean fried chicken joint and I had to try to re-create them. Pics and recipe below and here is a link to the youtube tutorial:
Recipe: - 4 lbs chicken (wings, drumsticks etc.) - 2 eggs - 1 cup of potato starch - 2 Tsp baking powder - 1 Tsp Salt - 1 Tsp fresh ground pepper - 1 Tsp garlic powder
Sauce: - 1 Tbsp fresh garlic (minced) - 6 Tbsp Korean red pepper paste - 1/2 cup ketchup - 2 Tbsp rice vinegar - 2 Tbsp Mirin (sweet cooking sauce) - 2 Tbsp Honey - 2 Tbsp Soy Sauce
1. Coat chicken in batter (eggs, potato starch, baking powder, salt, pepper, garlic powder)
2. Fry for 10 mins
3. combine sauce ingredients in a skillet and simmer for 5 mins
4. coat sauce on the chicken
5. sprinkle with sesame seeds
