We get Kobe brisket for $2.40 a pound, brisket does not command the prices rib eyes as an example do.

With all due respect, you are not getting KOBE brisket for $2.40 a pound!

ya know, I gotta wonder. Unless a critter is old, sick, etc, which most critters, are sold in thier prime, can you tell the difference in breeds or what they are fed? I don't think I could. We raised cows for 40 years, some we ate right of the pasture, some were grain fed before butchering, we couldn't see the difference? Unless the meat is tough as boot leather or running fat, who care what breed it is? My favorite breed is, "on sale" [IMG] Terry

boy i hate to even weigh in on this 1 but, kobe beef (real kobe beef) is raised ONLY in japan, fed beer(japanese @ 9-11% rice beer alcohol by volume),hand picked osaka rice, & massaged better'n a sumo champion daily... i've eaten real kobe imported beef & a 12oz steak was over $200. i can't even get black angus in kentucky & i just auctioned off 35 of them. for $2.40 an lb. - just tell me where i can get it & do they ship fex ex? cause i don't trust ups anymore.

Kobe is a district in Japan and you are right it is not from there. Wagyu is the strain, it is higher in fat content and is the strain that is being raised in the American west, it is sold as American Kobe. Much of it is shipped to Japan. Brisket is not a cut that the japanese are interested in so it does sale, in the West atleast, at a good price.

The reason Kobe beef is fed beer is to increase appetite and they message the animal because of the lack of free range.

Snake River Farms and Kobe of America both produce Wagyu beef and both use Kobe references because that is what Americans have heard of.

I am also interested in purchasing some Kobe beef brisket @ $2.40/lb. [IMG]

Just for reference Lobels is selling Waygu Beef Brisket 9 lbs for $124.98 or $13.88/lb.
