Killer wings from an awesome easy brine

Short and sweet post....brined some wings for a few hours and then about 90 minutes in the Char Griller pellet pusher at 350 degrees...outstanding

4 cups of water

3 tablespoons of kosher or pure salt

3 tablespoons of crushed red pepper

2 tablespoons of vinegar

1 tablespoon of fresh chopped garlic (+/-..I add about 3-4 rough chopped cloves)

 
Looks awesome! I did 2 kinds of wings last weekend. Jamican jerk marinaded wings and a brined and seasoned wing. Both were then done on the smoker at about 250 for a couple hours. They were simply fantastic.

Next time substitute a juice for your water. Apple, cherry kiwi etc. I used a apple/cherry juice and a bottle of beer as my brine base. Then salt a orange squeezed in and then the oranges thrown in. Garlic, peppercorns bay leaves. I think that was it. I brined them overnight.

LOL, Foam.....not hot at all....had a few pieces of crushed adhere to each wing but didn't translate to a hot taste. Yeah, alive and well still....C-ya

thank you..always a fav of mine, only time I really will eat the skin anymore but I can't see shelling out $2.50 a pound for wings

I am lucky to get fresh wings for 3.99 a lb. I just bought a bag of marinated fresh wings for that price from my meat shop I go. Will be smoking them tomorrow night or Sunday.
