I am going to make Kielbasa today

BUT

I'm not sure if I will get to smoke it today.

Can I smoke it tomorrow , OR do I have to do it all night to get it done?

I'm assuming that this is a cured product and that you will grind it, mix it, stuff it and then let it set in the fridge overnight and then smoke tomorrow.  If that is the case there is no problem smoking it tomorrow.  Make sure to show us some pics if you get a chance!!!!Reinhard
 
Dwane........as Reinhard mentioned, you are good to go with letting it sit overnight. Many recipes say that if using cure, let it sit overnight to work. Don't worry about the overnight rest.....

Yep....good advice above. My 2 cents...IF you stuff today & leave in the fridge overnight don't cover them....leaving them uncovered will really help dry those casings for good smoke adhering......Willie
 
Great advice on uncovered in fridge... I place a rack in the bottom of each meat lug for added air circulation during overnight rest. As well as, after they've been smoked.
