John, the recipe I used was on page 206 with some changes, my recipe for 5lbs of ground pork butt 

10 tea -soy protein

1 tea-cure

4 grams- fresh ground black pepper

55 grams-sea salt

7 grams-dextrose

2 cloves of garlic put through garlic press

6.3 grams-spanish paprika

2 grams-marjorm 

1 cup-ice water

ground meat , mixed in seasonings, stuffed and let sit overnight in refrigerator, smoked next day
